“Zakti’s Creators Let Tea Out of the Bag” By Liz Goulding in her Dallas Observer Food Blog

Tea is often overshadowed by the stronger, more caffeinated coffee. But there is way more to tea than ordering it sweetened or unsweetened. If you felt like it, you could geek out over the origins, flavors, and steeping methods of tea for the rest of your life. Pam Miller and her partner Janeil Engelstad fall solidly into that tea geek category, so much so that they decided to start their own loose-leaf tea company, Zakti, based here in Dallas.

UNDERGROUND TEA HOUSE, BRATISLAVA, SLOVAKIA

One of the more quirky tea houses in Europe is the Underground Tea House in Bratislava. After entering a passageway, off a cobblestone street and descending down centuries old stone stairs you arrive at this gem of a place.

The first room that you enter houses the tea bar and shop, which sells tea ware and other products from Asia including Tibetan slippers and incense. A labyrinth of rooms, outfitted with tables and chairs and sofa beds and pillows winds out from the shop.

FEED YOUR SPRING GARDEN WITH TEA LEAVES

Cultivate healthy plants and bring dying ones back to life by disseminating used tea leaves over the soil in your garden. Roses and ferns do especially well with the acidic tannins found in tea. Used tea leaves also enriches compost helping to create a nutrient rich, natural fertilizer for both floral and vegetable gardens.

One last poem

One last poem, for this year, from The Way of Tea to celebrate National Poetry Month

PURITY (SEI)

Though I sweep and sweep
Everywhere my garden path,
Through invisible
On the slim pine needles still
Specks of dirt may be found.

Tea Poem

Willow branches graze the grass,
As I sit in the shade drinking tea.
A note from a flute blows clearly,
Mingling with the sound of rain.
I could sit here alone forever,
And still I'd never feel lonely.

Anonymous poem inscribed on an
old Yi Hsing tea pot

zakti jasmine-tea risotto

The many joys of spring include young spring vegetables, such as asparagus, spring onions and small, golden beets that are sweeter than the fall varieties. At zakti we have been serving spring vegetables along side a classic jasmine-tea risotto. Jasmine white rice also works well for this simple, yet delightful, dish.

Enjoy!

The Way of Tea by Rikkansai

trace it, and ever deeper it goes;
like the fields of Musashi
where the moon is lucent,
its depths draw us on."

THE ART OF THE CUP

For more than half a century, the remarkable ceramic works of Ken Price (1935-2012) redefined contemporary sculpture, although for many years they were not exhibited widely. A retrospective that includes his whimsical, sophisticated cups, at the Nasher Sculpture Center in Dallas, offers visitors an unprecedented opportunity to experience and engage with his work. After the Nasher, the exhibition will travel to The Metropolitan Museum of Art in New York.

Words of a Mystic

The second shatters my loneliness.
The third causes the wrongs of life to fade gently from my recollection.
The fourth purifies my soul.
The fifth lifts me to the realms of the unwinking gods

NEW STUDY on BENEFITS OF GREEN TEA from PENN STATE

Penn State scientists found that when mice were fed an antioxidant in green tea called epigallocatechin-3-gallate (EGCG) at the same time they were given cornstarch, their blood sugar spiked much less than when they were given the cornstarch alone. There was a 50 percent reduction in blood sugar with a dose equivalent to about 1.5 cups of green tea for a human. The green tea needs to be consumed while you’re eating the starch, not after.

zakti and Sustainability

There are many environmental factors that we consider when sourcing tea, including: Do our suppliers share our core principles of sustainability and fair business practices? How are the growers treating their pickers and the other people that help to grow and harvest the tea? Are organic and/or sustainable growing practices being used, which leaves the soil nutrient and microbe rich? How can we best consolidate shipments to reduce our carbon footprint?

When in Prague

One of our favorite things to do when we travel around the world is to visit tea houses where we meet with other tea enthusiasts and often discover new teas. While several European capital cities have a number of tea houses, Prague's vibrant tea culture has a vibe and rhythm all its own. Many of Prague's tea houses date back to before the fall of the Berlin Wall and the end of communism in 1989. Located in what was then Czechoslovakia, the city benefited from the countries strong ties with China, the USSR, Japan and North Africa. All countries that have rich tea drinking traditions.
